Ash Blondies

These low-carb protein blondies created by Ash Thomas are the ultimate snack; big on taste but low in sugar and keto friendly. Add in some sugar free choc chips if you are feeling adventurous????

  • 2 Cups Almond Meal
  • 2/3 Cup Bindi Vanilla Pea Protein
  • 1/3 Cup Maca Powder Can omit if you don't have this
  • 2/3 Cup Coconut Oil
  • 3 Eggs
  • 1/3 - 1/2 Cup Water or Almond Milk as needed depending on humidity etc.
  • 1/4 Cup Stevia
  • 1 tsp Baking Powder
  • 1 Pinch Salt
1. Mix all dry ingredients together in bowl 2. Add in coconut oil and eggs and mix through 3. Slowly add in water or almond milk until moist but not runny 4. Option: to add in some sugar free white choc chips 5. Cook for 25 mins in oven at 180 deg C
