Keto Vanilla Choc Chip Mug Cake
- 30 Grams Bindi Protein Powder vanilla
- 20 Grams Coconut Flour
- 20 Grams Natvia or other granulated sweetener
- 1/2 tsp Baking Powder
- 1 Large Egg
- 1/4 Cup Almond Milk
- 1/4 tsp Vanilla Extract
- 2 Squares Dark Chocolate chopped into chunks
1. Spray a large mug with cooking spray
2. Add add dry ingredients and mix well
3. Add egg, vanilla and milk and mix well with a fork
4. The mixture should form a thick batter - if it is too crumbly add more almond milk
5. Add the dark chocolate chunks - push slightly into the top of the batter
6. Microwave for 1 minute and check - the mixture should be cooked through and hold together. If not, return to microwave for another 30 seconds.
7. Add your favourite toppings such as natural yoghurt, coconut yoghurt, blueberries and toasted coconut flakes.
