Lemon & Vanilla Bites

Light lemony tartness combined with a sweet buttery richness make these bites a delicious snack. A good source of Vitamins B, C and E, they also have plenty of omega-3 fatty acids, protein and fibre. Whip them up and try not to eat them all at once!

  • 200 Grams Walnuts (swap out for cashews if you prefer)
  • 30 Grams Bindi Pea Protein Vanilla
  • 2 tsp Lemon Zest
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Tahini
  • 2 Tbsp Agave (or rice malt syrup)
  • 1 Pinch Sea Salt
  • 1/3 Cup Dessicated Coconut to roll
1. Zest the lemons and then juice. 2. Put all ingredients including zest and juice into a food processor (keeping coconut aside for rolling) and blend for about 10 seconds. 3. Scrape the mixture down the sides,then blend again for 10-15 seconds. 4. Scrape the dough into a medium bowl. Place the coconut into a separate smaller bowl. 5. Pick off pieces of the dough and roll into small balls. toss the balls in coconut to cover. 6. Store in a tightly sealed container in the fridge for up to one week, or in the freezer for up to 2 months.
