Salted Caramel Protein Balls
- 1/2 Cup Almond Flour
- 1 Cup Oats
- 1/2 Cup Raw Cashews
- 1/4 Cup Nut Butter cashew or almond
- 1 tsp Vanilla Paste
- 1 Banana
- 1 Tbsp BINDI Protein Powder Vanilla
- 1/2 Cup Dessicated Coconut
- 14 Pitted Dates Soaked in hot water for 15 mins
- 1 Tbsp Sea Salt
- Good Quality Dark Chocolate for melting
1. Remove dates from hot water and keep water. Drain on paper towel and chop.
2. Add dates, half the salt and all other ingredients (except chocolate) to food processor and blend well. The mixture should be a little sticky to touch - if it is crumbly add a touch of leftover date water.
3. Roll mixture into balls, place on baking paper and tray, cover and freeze for 30 minutes.
4. Melt chocolate in microwave on medium. Coat balls in chocolate, drain on a fork and then place back on baking paper.
5. Sprinkle with sea salt before chocolate sets.
6. Cover lightly and refrigerate for 2 hours.
