Wendy’s Overnight Date and Muesli Muffins

These satisfying muffins have the added benefit of Supergreens, and the recipe makes a delicious big batch! Wrap them individually, pop them in the freezer and grab one when you need a quick, healthy snack.

Wendy’s Overnight Date and Muesli Muffins

  • 2 1/2 cups Plain Flour
  • 2 1/2 cups Natural Muesli (untoasted)
  • 2 tsp Cinnamon
  • 2 tsp Bicarb soda
  • 1 cup Brown Sugar
  • 1 cup Oat Bran
  • 1 1/2 cups Pitted Dates (chopped)
  • 4 cups Milk (almond milk, coconut milk or skim milk)
  • 1/2 cup Olive Oil
  • 2 Eggs
  • 2 tbsp Chia
  • 1 tbsp Bindi Supergreens Powder
1. Combine all ingredients in a large bowl. 2. Cover and refrigerate overnight. 3. Spoon mixture into muffin pans – it makes 18 large muffins, but you could halve the mixture. 4. Bake in moderately hot oven about 20 to 25 minutes (do not overcook). 5. Cool on wire rack. 6. Store in an airtight container, or wrap them individually, pop them in the freezer and grab one when you need a quick, healthy snack.
