Double Choc Muffins
- 1 Egg
- 1/2 Cup Almond Milk
- 1 tsp Baking Powder
- 1 Cup Flour
- 1/4 Cup Cocoa Powder
- 1 tsp Apple Cider Vinegar
- 1 Tbsp Chia Seeds
- 30 Grams Bindi Protein Powder Chocolate
- 1/4 Cup Granulated Sweetener of choice
- 3 Tbsp Liquid Sweetener of choice
- 1/2 Cup Choc Chips
1. Combine all dry ingredients in a bowl except baking powder.
2. Add milk, egg, liquid sweetener and chia seeds and stir until just combined.
3. Add the baking powder and apple cider vinegar and gently combine (this is what makes the muffins fluffy)
4. Stir through the chocolate chips and spoon into patty cases.
5. Bake at 180C for 15 minutes or until a knife comes out clean.
6. Allow to cool in the pan for 5 minutes before transferring to a rack to cool.
